  • Avocado: For the perfectly creamy avocado, choose one that is slightly soft as you squeeze but not feel too mushy.
  • Eggs: You’ll need hard-boiled eggs for the egg-mayo salad.

How to make avocado egg sandwich


  1. Boil the eggs: Boil the eggs in a pot of water for 10 minutes. I used an egg boiler from MINISO, which makes it even more convenient.
  1. Prepare the avocado spread: In a small bowl, mash the avocado with a fork, and mix together with a pinch of salt and pepper, a dust of chilli flakes, and a squeeze of lemon juice.
  1. Prepare the egg-mayo salad: Chop the hard-boiled eggs and transfer them to another bowl. Mix with mayonnaise, salt, and pepper.
  1. Toast the bread lightly for extra crunch and warmth.
  2. Assemble the sandwich: Spread the mashed avocado on one slice of toasted bread, then add the egg-mayo salad on top. Layer with fresh lettuce and tomato slices. Top with another bread slice.
