Ingredients for scallion oil spam & egg rice


  • Scallions: I chopped them small to maximise flavour infusion, but you can also chop them in longer strips.
  • Ginger: Use grated ginger for more juice or simply minced ginger.
  • Oil
  • Salt: For seasoning the scallion oil.
  • SPAM: Use any brands of luncheon meat you have at home!
  • Egg: Pair with runny sunny-side-up eggs, fluffy scrambled eggs, or soft-boiled eggs for the ultimate indulgence.
  • Steamed rice bowl: For serving.
  • Optionals: A drizzle of sweet soy sauce balances the savoury flavours and makes the dish even more delicious!

How to make scallion oil spam & egg rice in 15 minutes


  1. Prepare: Finely chop the scallions small, cut the spam into cubes, and grate the ginger using a grater plate. Set aside.
  1. Make the scallion oil: Heat oil in a pot/pan over medium-high until it starts to bubble, add in chopped scallions and grated ginger, then stir-fry vigorously for about 20-30 seconds (or longer if you prefer softer textures). Transfer to a small bowl, and season with a pinch of salt.
  1. Cook the spam and egg: Heat some oil in a pan over medium heat, and pan-fry spam cubes until browned (3-4 minutes). Heat the remaining oil over high heat, crack in an egg, then turn down the heat to medium-low. Cook for about 2 minutes for a runny egg.
  2. Assemble: Layer the egg, spam and scallion oil over rice, drizzle some sweet soy sauce on top and let the yolk ooze over everything. Enjoy!

Success tips on making scallion oil spam & egg rice


Ensure the oil is well-heated.

Before stir-frying the chopped scallions and grated ginger, be sure the oil in the pot/pan is well-heated until bubbly. This helps bring out the toasty fragrance while keeping the scallions vibrant in colour and their slight crunch. For extra flavour, stir-fry with chopped shallots as well!

For the perfect runny egg.

To make a perfect runny egg, be sure to heat the pan and oil over medium-high heat in advance. Once you crack in an egg, turn down the heat to medium-low. This allows you to create crisp edges of the whites while keeping the yolk runny.
