  1. Transfer the chicken feet back to the pot, then add in salt, pepper, chicken powder, and sand ginger powder. Give it a rough mix, and pour in water to a level that covers all the chicken feet.

Ingredients
  

  • 20 chicken feet

For the chicken broth

  • 2 tbsp sand ginger powder 沙薑粉
  • 5 tbsp chicken powder
  • 3 slices ginger
  • 2 tsp salt
  • 2 tsp pepper
  • 5-6 cups water

For the sand ginger sauce

  • 4 tsp sesame oil
  • 2 tbsp sand ginger powder 沙薑粉
  • 2 tsp pepper

Instructions
 

  • Blanch the chicken feet in a pot of boiling water for about 1-2 minutes. Drain the murky water, and rinse the chicken feet to remove any excess impurities and fats.
  • Transfer the chicken feet back to the pot. Add in 3 pcs of ginger, 2 tsp salt, 2 tsp pepper, 5 tbsp chicken powder and 2 tbsp sand ginger powder, then give it a mix.
  • Pour in water to a level that covers all chicken feet. Bring it to boil, cover with a lid, lower to medium heat, and simmer for 20 minutes. Take out the chicken feet and keep the broth.
  • Meanwhile, prepare the sand ginger sauce. In a large bowl, mix together 2 tbsp sand ginger powder, 2 tsp pepper, and 4 tsp sesame oil.
  • Transfer cooked chicken feet to the mixed seasonings, mix until well combined.
