Sand Ginger Chicken Feet 沙薑雞腳

For the chicken broth
- 2 tbsp sand ginger powder 沙薑粉
- 5 tbsp chicken powder
- 3 slices ginger
- 2 tsp salt
- 2 tsp pepper
- 5-6 cups water
For the sand ginger sauce
- 4 tsp sesame oil
- 2 tbsp sand ginger powder 沙薑粉
- 2 tsp pepper
Blanch the chicken feet in a pot of boiling water for about 1-2 minutes. Drain the murky water, and rinse the chicken feet to remove any excess impurities and fats.
Transfer the chicken feet back to the pot. Add in 3 pcs of ginger, 2 tsp salt, 2 tsp pepper, 5 tbsp chicken powder and 2 tbsp sand ginger powder, then give it a mix.
Pour in water to a level that covers all chicken feet. Bring it to boil, cover with a lid, lower to medium heat, and simmer for 20 minutes. Take out the chicken feet and keep the broth.
Meanwhile, prepare the sand ginger sauce. In a large bowl, mix together 2 tbsp sand ginger powder, 2 tsp pepper, and 4 tsp sesame oil.
Transfer cooked chicken feet to the mixed seasonings, mix until well combined.
