Ingredients for pumpkin pie overnight oats
- Overnight oats base: I used rolled oats, milk, Greek yogurt, chia seeds, and maple syrup for my overnight oats base. For details on the basic overnight oats ratio, check out this blog post.
- Pumpkin puree: For convenience, I used store bought pumpkin puree.
- Cosy spices: I couldn’t find pumpkin spice so I used cinnamon powder, nutmeg, and ginger powder to create flavours reminiscent of a pumpkin pie. You can also add in allspice and cloves if you have them at home!
- Biscuits: This is an optional topping to add a pie-like crunchiness to the overnight oats.

How to make pumpkin pie overnight oats
- In a jar or a bowl, add in rolled oats, chia seeds, milk, Greek yogurt, maple syrup, pumpkin puree, cinnamon powder, and a pinch of nutmeg and ginger powder.
- Mix everything together, then cover with a lid, and chill overnight.
- The next morning, add in any toppings you’d prefer. I topped with some more Greek yogurt and crushed biscuits. You can also add in some chopped nuts for extra crunchiness!

How to make pumpkin puree?
If you can’t find canned pumpkin puree in store, you can make your own at home easily! Here’s how to do it.
- Cut the pumpkin in half with a sharp knife. Be careful, as the skin can be very tough.
- Use a spoon to scoop out the seeds and strings inside.
- Either steam or roast the pumpkin – if you prefer a richer and thicker texture, roasting is a better option; but steaming is a quicker method and it preserves more nutrients of the pumpkin.
- Steaming: Steam the pumpkin for 20-30 minutes until the flesh is tender.
- Roasting: Preheat the oven to 175ºC (350ºF), and roast for about 45-60 minutes, or until the flesh is tender and easily pierced with a fork.
- Let the pumpkin cool for a few minutes until it’s cool enough to handle, then use a spoon to scoop the soft flesh out of the skin.
- Place the pumpkin flesh in a food processor or blender. Blend until smooth and creamy. If the puree is too thick, you can add a little water to achieve your desired consistency.
- (Optional) If you prefer a smoother texture, you can strain the puree through a fine mesh sieve or cheesecloth to remove excess moisture.

Can I use instant oats instead?
While you can use instant oats, they may result in a mushier texture. Rolled oats are recommended for a creamier consistency that holds up well overnight.
How long do I need to soak the oats?
For the best results, soak the oats for at least 4-6 hours, preferably overnight. This allows the oats to absorb the liquid and flavors fully.
How long can they last?
Overnight oats can be kept for up to 5 days if stored in an airtight container or a jar in the refrigerator, making them a convenient meal prep option.

Pumpkin Pie Overnight Oats
Ingredients
For the overnight oats base
- 1/4 cup rolled oats
- 1/4 cup milk
- 1-2 tbsp Greek yogurt
- 1 tbsp chia seeds
- 1-2 tsp maple syrup
For the pumpkin pie mixture

- 1/4 tsp ginger powder

- Extra Greek yogurt
- Lotus Biscoff biscuits crushed
Instructions
