For the overnight oats base
- 1/4 cup rolled oats
- 1/4 cup milk
- 1-2 tbsp Greek yogurt
- 1 tbsp chia seeds
- 1-2 tsp maple syrup
For the pumpkin pie mixture
- 1 tbsp canned pumpkin puree
- 1/2 tsp cinnamon powder
- 1/4 tsp nutmeg
- 1/4 tsp ginger powder
Optional toppings
- Extra Greek yogurt
- Lotus Biscoff biscuits crushed
In a jar or a bowl, add in rolled oats, chia seeds, milk, Greek yogurt, maple syrup, pumpkin puree, cinnamon powder, and a pinch of nutmeg and ginger powder.
Mix everything together, then cover with a lid, and chill overnight.
The next morning, add in any toppings you’d prefer. I topped with some more Greek yogurt and crushed biscuits. You can also add in some chopped nuts for extra crunchiness!
