Ingredients
  

For the overnight oats base

  • 1/4 cup rolled oats
  • 1/4 cup milk
  • 1-2 tbsp Greek yogurt
  • 1 tbsp chia seeds
  • 1-2 tsp maple syrup

For the pumpkin pie mixture

  • 1 tbsp canned pumpkin puree
  • 1/2 tsp cinnamon powder
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger powder

Optional toppings

  • Extra Greek yogurt
  • Lotus Biscoff biscuits crushed

Instructions
 

  • In a jar or a bowl, add in rolled oats, chia seeds, milk, Greek yogurt, maple syrup, pumpkin puree, cinnamon powder, and a pinch of nutmeg and ginger powder.
  • Mix everything together, then cover with a lid, and chill overnight.
  • The next morning, add in any toppings you’d prefer. I topped with some more Greek yogurt and crushed biscuits. You can also add in some chopped nuts for extra crunchiness!
