Spicy Shredded Chicken with Kimchi and Enoki Mushrooms

- 1 chicken breast sliced
- 200 g enoki mushrooms
- a handful of chopped kimchi
- ½ tsp salt for seasoning
For the seasoning sauce
- 2 tbsp white vinegar
- 2 tsp sugar
- ½ lemon squeeze to juice
- 1 tbsp fish sauce
- ½ tbsp soy sauce
- 2 tbsp water
- 2 garlic cloves minced
- 1 hot chilli pepper chopped
Prepare the seasoning sauce in advance. In a bowl, add vinegar and sugar, and mix until the sugar is dissolved. Add in lemon juice, fish sauce, soy sauce, and water. Stir to combine.
Add in minced garlic and chopped hot chilli peppers. Mix well and set aside.
Boil a pot of water, add in enoki mushrooms, and season with salt. Cook for 1-2 minutes until tender and limp. Set aside.
Using the same pot, cook the chicken breasts for 2-3 minutes until they've turned white. Check if they are cooked by poking a chopstick through the meat. If the chopstick goes through the chicken meat, remove the chicken breasts from the pot and chill in a bowl of ice water.
Shred the chicken breasts in a serving plate by tearing them apart using your hands or two forks.
Add in the cooked enoki mushrooms, seasoning sauce, and chopped kimchi. Mix to combine.
