One-Pan Garlic Soy Chicken

This garlic soy chicken is incredibly tender and juicy, with bursts of robust flavours. It is easy to make and incredibly flavourful, and you only need one pan for this!

Equipment

  • 1 Deep frying pan

Ingredients
  

  • 4 chicken thigh fillets (about 500g)
  • 2 shallots chopped
  • 100 ml water
  • 1 spring onion chopped (for garnishing)

For the marinade

  • 1 tsp cornstarch
  • 1 tsp sugar
  • 2 tsp chicken powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp soy sauce
  • 1/2 tbsp fish sauce
  • 1/2 tbsp mirin
  • 1 tbsp rice wine
  • 1/2 tbsp sesame oil
  • 1 tbsp oil
  • 3 garlic cloves minced
  • 1 shallot chopped
  • 3 pieces of ginger sliced
  • 2 spring onions chopped into 2-inch length

Instructions
 

  • In a large bowl, add in all ingredients for the marinade to the chicken thighs. Massage to incorporate all ingredients for a few minutes, and marinate the chicken thighs for at least half an hour to 2 hours.
  • In a deep frying pan, heat some oil over medium-high heat. Stir-fry the shallots until fragrant.
  • Transfer the chicken thigh fillets to the pan, and pan-sear for 2 minutes (1 minute per side).
  • Add in the remaining marinade and water. Lower the heat, cover with a lid, and simmer for 5 minutes.
  • Transfer the cooked chicken thighs to a chopping board, let rest for 5 minutes, then cut into slices.
  • Transfer the sliced chicken thighs to a serving plate, pour over the seasoning sauce, and garnish with chopped spring onions.
