Mushroom Cheese Toastie
With golden-crisp, buttery bread hugging a satisfying core of melted cheese, savoury mushrooms, and caramelised onions, this mushroom cheese toastie has become my new favourite. It is quick to make, hearty, and packed with flavours.

- 2 slices of bread
- 200 g mushrooms
- 1/2 onion sliced
- 1 garlic clove minced
- 2 tbsp butter
- 1/2 tsp thyme
- 1/2 tsp chilli powder (optional, depending on your heat tolerance)
- Salt & pepper to taste
- Fresh parsley chopped
Preparation: Mince the garlic, slice the onion and mushrooms, then set aside.
Sauté onions: Melt 1 tbsp butter in a pan over medium heat. Add in onions and sauté until slightly soft.
Cook mushrooms: Add in mushrooms, garlic, thyme, and chilli powder, then cook until tender and golden. Season with a pinch of salt and pepper, do a taste test, and stir in freshly chopped parsley.
Assemble the sandwich: Sprinkle a generous amount of cheese on a piece of bread, layer with sautéed onions and mushrooms, then close the sandwich.
Make the toastie: Melt 1 tbsp butter in a pan over medium-low heat. Place the sandwich in the pan and cook for about 2-3 minutes per side, pressing down lightly, until the bread is golden and cheese is melted.
Serve: Slice in half and enjoy while hot and gooey!
