- 1 cup mixed berries (fresh strawberries, raspberries, blueberries - ⅓ cup each)
- 2 tbsp sugar (adjust to taste)
- 1-2 tsp lemon juice (optional, for brightness)
For the parfait
- 1 cup Greek yogurt
- 2-3 tbsp granola
- 1-2 tbsp chia seeds
Optionals
- Chopped nuts (almonds, walnuts, or pecans)
- Drizzle of honey or nut butter
- Fresh mint or extra berries for garnish
Make the Mixed Berry Compote
In a small pot, mix together mixed berries (strawberries, blueberries, raspberries) and sugar. (Optional) squeeze in some lemon juice for brightness. Heat the pot over medium heat.
Simmer for 8-10 minutes, using a spoon to stir occasionally and press to mash the berries, until they break down into a saucy compote. Let cool.
