Ingredients
  

  • 1 cup mixed berries (fresh strawberries, raspberries, blueberries - ⅓ cup each)
  • 2 tbsp sugar (adjust to taste)
  • 1-2 tsp lemon juice (optional, for brightness)

For the parfait

  • 1 cup Greek yogurt
  • 2-3 tbsp granola
  • 1-2 tbsp chia seeds

Optionals

  • Chopped nuts (almonds, walnuts, or pecans)
  • Drizzle of honey or nut butter
  • Fresh mint or extra berries for garnish

Instructions
 

Make the Mixed Berry Compote

  • In a small pot, mix together mixed berries (strawberries, blueberries, raspberries) and sugar. (Optional) squeeze in some lemon juice for brightness. Heat the pot over medium heat.
  • Simmer for 8-10 minutes, using a spoon to stir occasionally and press to mash the berries, until they break down into a saucy compote. Let cool.

Layer the Parfait

  • In a glass jar or bowl, start with a layer of Greek yogurt.
  • Add a spoonful of berry compote, and a sprinkle of granola and chia seeds.
  • Repeat layers (yogurt → compote → granola → chia seeds).

Serve & Enjoy!

  • Top with a drizzle of honey, more fresh berries, chopped nuts, or other toppings of your choice.
