Ingredients
  

  • 1 ripe banana (mashed)
  • ½ cup rolled oats (blended into oat flour, or use pre-made oat flour)
  • 1 egg
  • 1 tbsp honey (or maple syrup)
  • (Optional) ½ tsp cinnamon or vanilla extract

Instructions
 

  • Blend the oats: In a blender or food processor, blend the oats until fine.
  • Prepare the batter: In a bowl, mash the banana, then stir in oat flour, egg, and honey. (Optional: add a pinch of cinnamon powder/vanilla extract for extra flavour). Let sit for 5 mins to thicken.
  • Cook the pancakes: Heat a lightly greased non-stick pan over medium-low heat. Pour a ladle of batter and cook for 2-3 minutes until bubbles form. Gently flip and cook for another 1-2 minutes until golden. Repeat with remaining batter.
  • Serve warm: Enjoy with a drizzle of honey, fresh fruits, yogurt, or nut butter!
